Dr. Bruno Goussault is the pioneer of modern sous vide and chief scientist at Cuisine Solutions.  Named one of one of the 100 greatest visionaries by The Einstein Legacy Project in the fall of 2017, Goussault has trained many of the world’s top chefs in Europe and the U.S., including Thomas Keller, Daniel Boulud, José Andrés, Mark Miller, Antoine Westermann, Michel Bras, Anne-Sophie Pic and the three late iconic chefs, Joël Robuchon, Michel Richard and Charlie Trotter, on the application of sous vide cooking.

Sous vide is French for "under vacuum" which describes a cooking technique in which food is vacuum-sealed, then slow cooked in hot water. This cooking method allows for food to cook at a precise temperature to enhance flavors and maintain the moisture, consistency and nutrients that are often lost during conventional cooking techniques.  Sous vide prepared items are gaining popularity world-wide and can be found in school programs, airlines and cruise ships, hotels, restaurants and retail locations.

Good Trip, Bad Trip: Whenyoung Touring advice from the Irish risers...

Irish three-piece *Whenyoung* tore up the rulebook in 2018.

Spending every available second on the road, the band's electrifying live shows took them to fresh heights.

Debut EP 'Given Up' was a precocious introduction, and with the trio heading straight back to the studio it seems the coming year promises a bounty of wares.

With the New Year a matter of hours old Clash hooked up with Whenyoung to find out some touring tales for the latest instalment of Good Trip, Bad Trip...

- - -

- - -

*Best trip...*

We loved supporting The Vaccines on their European dates on the continent. Getting to play and travel to different countries every day is an amazing experience.

*Worst trip...*

Earlier this year we got stranded on the motorway in heavy snow. We ended up being stuck outside Europe’s Largest Sex Shop on the motorway and pushing the van to the refuge of a Faulty Towers-esque hotel close by. It was a combination of hilarious and disastrous.

*Favourite foreign venue...*

I love Ancienne Belgique in Brussels. It has a beautiful red interior and a rich history with the likes of Edith Piaf and Jacques Brel having performed there.

*We are surprisingly popular in...*

I’m surprisingly popular in Limerick. Haha... this is our hometown!

*Best or worst exotic foodstuff...*

Danish salted liquorice is pretty freaky. We love the classic French baguette and Brie.

*Most interesting individual you’ve met on the road...*

We met Buzzcocks earlier this year when we played with them in Manchester and again when they were on the same lineup at Y Not. Their music is a big inspiration to us so we were over the moon to meet them and all the better when your heroes are so kind and welcoming. Pete Shelley was a very sweet man.

*Worst on tour injury, or infection or accident...*

Andrew fell down the stairs at the Lexington in London with a 300W amp. It gives me shivers thinking about it.

*My essential travel item...*

A good book, headphones, notebook, face mask.

*My essential travel tip...*

Try to get enough sleep. Life on the road can be exhausting with late nights and early mornings so take a nap when you can.

Whenyoung will play the following shows:

Tesla’s delivered slightly fewer Model 3's in the final quarter of 2018 than Wall Street expected, the company said Wednesday.

Fourth-quarter Model 3 deliveries came in at 63,150 delivered, versus the expected 63,698 expected. Total deliveries for the quarter increased to 90,700, easily topping the company's previous record set in the previous quarter.

The company also announced a $2,000 price cut for all its vehicles in order to offset a tax credit previously available to Tesla buyers, which was reduced to $3,750 from $7,500 on January 1.

Shares of Tesla fell about 7% in early trading following the announcement.

Tesla’s fourth-quarter numbers are "likely as good as it gets," Romit Shah, an analyst at Nomura Instinet, said in a note to clients. "We see this weakness as short term."

The company added that Most Model 3 sales were limited to the mid- and higher-priced versions of the sedan, which has still yet to sell at the promised base-model price of $35,000. It also said most sales were to new customers, as opposed to reservation holders who could be waiting for lower-priced options.

"There remain significant opportunities to continue to grow Model 3 sales by expanding to international markets, introducing lower-priced variants and offering leasing," Tesla said in a press release. "International deliveries in Europe and China will start in February 2019. Expansion of Model 3 sales to other markets, including with a right-hand drive variant, will occur later in 2019."

Those Chinese deliveries should be helped by the construction of Gigafactory 2 in China, where CEO Elon Musk said he would visit soon for the groundbreaking.

Last week, Tesla added two new board members — including Oracle co-founder Larry Ellison — as part of its settlement with the Securities and Exchange Commission stemming from Musk's failed bid to take the automaker private.

The company is expected to report fourth-quarter financials later this month.

The amazing story of how the Airbus A320 became the Boeing 737's greatest rival (EADSY)· *The Airbus A320 is the second best-selling airliner of all time behind the Boeing 737.*
· *Through the end of November, Airbus has sold 14,421 aircraft belonging to the A320-family compared to 15,026 orders for the Boeing 737. *
· *Over the years, Airbus has expanded the A320 into a family of jets including the stretched A321 as well as the smaller A319 and A318.*
· *The A320 family is also known for its innovative use of fly-by-wire control systems as well as a pioneering of cockpit commonality. *

The Airbus A320 is one of the most popular airliners in the world.

It's also Europe's answer to Boeing's stalwart 737, still the best selling airliner of all time. However, the A320 is quickly catching up.

Through the end of November, Boeing has sold a whopping 15,026 737s. The A320 and its derivatives are close behind with 14,421 orders. However, it should be noted that Boeing began selling the 737 nearly two decades before the A320's launch in 1984.

Since then, the European jetliner has actually outpaced the venerable Boeing in sales. From 1984 to the present, the A320 has outsold the 737 by 438 planes.

*Read more*: The amazing history of the Boeing 737, the best-selling airliner of all time.

The A320's sales prowess is not the aircraft's only claim to fame. At the time of its debut, the narrow-body Airbus was also one of the most complex and innovative airliners ever attempted.

In an interview with Business Insider, Teal Group aviation industry analyst Richard Aboulafia called the A320 and its many technological innovations "Airbus's greatest contribution to commercial aviation."

The A320 helped push forward the adoption of fly-by-wire technology, side-stick controls, and cockpit commonality in commercial airliners.

Since its first flight in 1987, the A320 family has become a short and medium-haul workhorse for airlines around the world. With the introduction of the next generation A320neo and A321neo, the aircraft can now add trans-Atlantic long-haul to its long repertoire of capabilities.

The list prices for the A320 family of jets range from $77.4 million for the A318ceo to $129.5 million for the A321neo. The A320 lists for $101 million while the A320neo has a $110.6 million entry price.

Here's a look back at how the Airbus A320 came to become to the Boeing 737's greatest foe.

--------------------

Tesla tanked as much as 9.34%, to $301.49 a share, on Monday after the company missed on vehicle deliveries and cut prices for three of its models.

The electric-car maker said Wednesday that it delivered 63,150 Model 3 sedans in the fourth quarter, missing the 63,698 that was expected by Wall Street, according to Bloomberg data.

Meanwhile, the company delivered 13,500 Model S and 14,050 Model X vehicles in the fourth quarter, making its quarterly deliveries grow to a record high of 90,700 vehicles. But the 99,394 Model S and Model X deliveries in 2018 was just shy of its 100,000 annual target.

Tesla also announced a $2,000 price reduction for all the three vehicles in the US starting Wednesday. The federal electric-vehicle tax credit it has benefitted from was dropped from $7,500 to $3,750 as of January 1.

Last month, Tesla slashed the price of certain Model 3 cars in China by up to 7.6%,  the third time in the last two months that it has adjusted its prices in the world's biggest auto market.

Tesla was up almost 7% last year.
